    Default Biscuits for MJ

    I make these at work, and this recipe makes ~20 biscuits, so you can divide it to make as many as you want. They do freeze well so if you make the whole batch, you can freeze the rest and pull them out as needed. Also, I make them in a rack oven so the cook time might be different. Just watch them and you'll be fine.

    Xorn's Yummy Biscuits:
    7cups All Purpose Flour
    4teaspoons baking powder
    2teaspoons baking soda
    2teaspoons salt
    1lb cold butter, 1inch cubes
    3cups shredded cheddar
    5 green onions, chopped
    2tablespoons parsley, minced
    3cups buttermilk

    *Mix flour, baking powder, baking soda, and salt in a mixer or bowl. Cut in butter, til grainy.

    *Add cheese, onions, and parsley.

    *Add the buttermilk and mix until just come together. If using a mixer, mix briefly and then finish by hand. If you mix the dough too long, your biscuits will be dense and gummy.

    *Place on floured surface and pat down to 1inch thick. Cut 3inch rounds and place on a sheet pan covered with parchment paper. You can combine the scraps once to make more biscuits, then just mush the rest of the scraps together to make one big weird shaped one. If you combine the scraps too much, you will overwork the dough and get gummy biscuits.

    *Make an egg wash with 1 egg and milk, and brush the tops of the biscuits

    *Bake at 375 for 21 mins

    Made my "Xorn's Yummy Biscuits" today, with a lot of help from my husband.

    They are very good.

    I didn't use onion though, cause ick!
